Nestle the flour coated chicken pieces down into the sauce. Using a spoon, drizzle some sauce and a few vegetables over the top of the chicken pieces; bring just to a boil. Place the lid on pot and place into the preheated oven. Meanwhile, in a large saute pan, heat the oil over medium-high heat. Add the shallots, garlic, thyme, salt, and pepper, and cook.
